Why Drill Field Tea Sour Pairs With the Leatherneck
In our tasting notes, the Leatherneck has a pronounced leather profile with toasted cedar, hints of pepper and light nuttiness, wrapped in a smooth, creamy oiliness.
Black tea's tannins have the same dry grip as leather, the almond in orgeat brings out the Leatherneck's light nuttiness, and the silky foam echoes its smooth, creamy oiliness.
Ingredients
- 3 oz strong black tea, brewed and chilled
- ¾ oz orgeat (almond syrup)
- ½ oz fresh lemon juice
- ½ oz aquafaba or 1 egg white
- Garnish: three drops of Angostura on the foam (contains alcohol, so skip for fully zero-proof)
How to Make Drill Field Tea Sour
- Shake everything hard without ice for 10 seconds to build foam.
- Add ice and shake again until cold.
- Strain into a chilled glass.
Pairing Tips
- Brew the tea strong (two bags or two teaspoons of loose tea per cup) and chill it fully. Weak tea loses the tannin that matches the leather.
- The dry shake matters. Shaking without ice first is what builds the silky foam.
- Make a pitcher of the tea ahead of time and shake each drink to order.
