Why Devil Dog Pairs With the Leatherneck
In our tasting notes, the Leatherneck has a pronounced leather profile with toasted cedar, hints of pepper and light nuttiness, wrapped in a smooth, creamy oiliness.
Rye's spice meets the Leatherneck's pepper, nutty amontillado sherry picks up the light nuttiness, and a touch of maple rounds the edges so the pronounced leather and toasted cedar stay out front.
Ingredients
- 2 oz rye whiskey
- ½ oz amontillado sherry
- 1 tsp pure maple syrup
- 2 dashes Angostura bitters
- 1 dash black walnut bitters
- Garnish: lemon peel, expressed
How to Make Devil Dog
- Add everything to a mixing glass with ice.
- Stir about 30 seconds.
- Strain over one large cube.
- Express a lemon peel over the top and discard it.
Pairing Tips
- Amontillado is the key. Its dry, nutty character is what picks up the Leatherneck's light nuttiness. A sweet cream sherry will not do the same job.
- Discard the lemon peel after expressing it. You want the bright oils on top, not lemon flavor competing with the leather.
- A 100-proof rye stands up better to a medium-full cigar than a softer, lower-proof bottle.
